After transforming his own health through an organic, plant-based lifestyle, he made it his mission to help others improve their health and wellness through mindful eating.

As the founder of Farm to Fork Catering, Gilliam’s Farm, and Urban Farmhouse, Marcus builds brands centered on fresh, locally sourced ingredients, sustainable agriculture, and community connection. Through catering, personal chef services, wellness-focused meal programs, workshops, and future cookbook projects, he makes nutritious food accessible and enjoyable.

With more than 20 years of experience in catering, hospitality management, event operations, restaurant development, and business growth, Marcus has led teams, managed large-scale events, and developed culinary concepts across the East Coast. He also advocates for sustainable living, wellness education, and economic development, showing that food can be a powerful tool for healing, connection, and transformation.
